Birthday tea for two
Kith cafe, conquered.
Simplicity is key when it comes to brunch fare, no? It seems that every cafe has a brunch dish, with the quintessential two eggs, toast, mushrooms and meat. Sounds easy enough.
Yet…You want to have your bread toasted, to the point of caramel smokiness. Your eggs scrambled with a quivering smoothness such that it slides down your throat. The mushrooms have to be adequately fragrant with garlic and herbs, yet retaining its intense woody flavor. Your choice of protein, be it ham, bacon or sausages to be done where the natural juices has been coaxed into a savory gravy. Your butter has to yield to the knife, and lusciously creamy to pat everything off.
Simple? Suddenly I don’t think so. Found myself staring at solid egg yolks, wimpy egg whites and worse still, raw egg whites in many a poached eggs I’ve ordered.
Thank goodness I made sure that i always had good coffee to fall back on.
